It's a tough question!
Dos Santos could lose to either Cain in a rematch, or Overeem, in a fight i'm dying to see. He has a good chance to remain champ though.
Jones has a great chance, assuming he fights 3 times he'll need to defend against probably Evans, Hendo and 1 other, maybe Davis? All of those are doable for him, i'd pick him to win against each right now.
Anderson, i think, really depends on the Chael fight. I like Chael and he has by far the best chance of beating Anderson, i'm not sure he'll be able to do as well against Silva this time though. Munoz could GnP him too i guess, but unlikely...
For me i don't think we can count GSP as he'll technically stay 'champ' without fighting....
I think Edgar really has his hands full with Bendo, but if he can overcome him, and Melendez stays in Strikeforce, then he can retain the title too. Who else can beat him?
Aldo should be able to retain his and along with Jones is probably the surest bet for me. He has great TDD which should see him past Mendes, and then what is there to challenge him? The most likely way he'd lose his belt is if Frankie lost to Bendo and moved down....
Cruz has a decent shot too, but it all depends on the Faber fight. I actually think Faber will take it.

I've gone with GSP as maybe we might not see him defend until late 2012 seems a safe bet.
Out of all the champions I just feel Edgar Is the most vulnerable I know he has beat BJ twice and gone 1-0-1 with Maynard this year but I just feel he is the most beatable strangely.

Anderson probably has the toughest individual test of everyone, but I think he might surprise by looking better than he did the last time he fought Chael.
Jones is the safest, then Aldo, Cruz, JDS.
Edgar kind of depends on who emerges from "the mix" as a contender. Melendez is his hardest stylistic match up but if that isn't happening then it's tricky. Cerrone - Diaz winner is the next probable contender then. I could see Diaz giving Edgar a lot of trouble over 5 rounds. I do see Edgar beating Henderson though.

JDS, Aldo and Cruz for me.
GSP loses to Diaz when he comes back
Anderson loses to Chael
Edgar loses to Henderson
and Jones gets knocked unconscious by Hendo.

I think Bones, Anderson, Aldo and Cruz all remain champs.
Overeem beats Dos Santos
Diaz beats GSP (hopefully, due to GSP's long lay-off)
And the biggest cert for a champion to lose is Edgar. I think Bendo will definately beat him.

I voted for everyone bar Anderson, partly because I think Sonnen will beat him and if not that then I think he'll retire by the end of the year anyway.
I agree with most of you that Edgar is the most beatable, but I think he'll beat Bendo, and I don't see many worthy challengers coming through either. Melendez would be a good fight but I doubt he'll be in the UFC within the year.

Good post dude.
IMO
JDS gets beat by Cain
Jones to stay as champion, although Davis to go the distance with him.
Anderson will get beat by Sonnen
GSP won't fight
Edgar to get beat by Bendo
Aldo to stay as champion
Cruz to get beat by Faber
